This dish goes by many names, including Gas-house Eggs, One-Eyed Jack and Toad in the Hole/Baby in the Hole. But my father taught me how to make these when my brother and I were little, probably the first thing I ever cooked by myself, and it's definitely comfort food.
Ingredients
2 pieces of bread (large)
2 eggs
butter
Directions
Place the pieces of bread on top of each other
Cut a hole ~ 1.5 inches in diameter out of the middle of both.
Butter one side of each bread slice generously as well as the hole.
Put a 10-12" frying pan on medium heat
Melt a tablespoon of butter or enough to cover the bottom of the pan.
Place the 2 pieces of bread, butter side UP into the pan & brown the bottom side in the melted butter.
When the bottom is brown, flip the bread over;
Crack an egg into each hole, being careful not to break the yolks.
After 1-2 minutes, flip again, being careful not to break the yolks.
Remove from heat when the whites are cooked but the yolk is still runny
