Asparagus spread

Emily Lopez-Santa, MS1

This is a yummy spread that you can have with crackers, bread, etc. Great to make finger sandwiches with.

Ingredients

  • (2) 8oz cans of cut asparagus spears

  • 1 cream cheese

  • ½ onion

  • onion salt (to taste)

Steps

  • In a food processor, mix the asparagus spears and the cream cheese until it is blended.

  • Add onion salt to taste and blend

  • Dice onion into small cubes and add them to mixture

  • Blend in the food processor (but don’t blend as much, since you still want some bigger onion chunks of onion)

Tips:

Don’t add a lot of onion salt at the beginning since you are going to add an actual onion later on. After you add the actual onion, taste and adjust onion salt amount.

If you only have fresh asparagus, boil them until they are soft and mushy and then proceed with the steps.

Enjoy!
