Greek Honey Cake

My Mom’s recipe—a simple version of the baklava taste. Simple, sweet, and a favorite.

Ingredients


Syrup

½ cup sugar

1 cup honey

¾ cp water

¾ teaspoons lemon juice


Cake

¾ cup butter

¼ teaspoon salt

¾ cup sugar

½ teaspoon cinnamon

3 eggs

¼ cup milk

1 cup flour, sifted

½ teaspoon grated orange rind

1 ½ teaspoon baking powder

1 cup walnuts

Directions


Syrup

  • Mix sugar, honey and water in a saucepan and simmer for 5 minutes.

  • Skim and add lemon juice.

  • Boil for another 2 minutes and then cool


Cake

  • Preheat oven at 350 degrees

  • Cream butter and sugar together.

  • Add eggs, 1 at a time, beating well each time.

  • Sift together flour, baking powder, salt and cinnamon. Add to batter.

  • Stir in milk and orange rind.

  • Mix well and stir in nuts.

  • Pour into a greased and floured 8 X 8 X 2 inch pan.

  • Bake in the oven for 30 minutes or until done.

  • Remove from the oven and cut into diamond shapes in the pan while still hot.

  • Pour syrup over cake, refrigerate and let soak until ready to serve. A dollop of whipped cream may be added when serving.
