My family and I have always been vegetarian but, since the start of 2020, we have turned completely to plant-based products so that we can live a healthier, happier, and more environmentally-friendly life. Being cooped at home during COVID-19 has been an unexpected yet welcomed time for my family to regroup after a long time and share some fun in the kitchen! These vegan banana oatmeal chocolate chip cookies are SUCH a versatile dish that can be used for a morning pick-me-up, a midday snack, or just as a healthy dessert! Feel free to make any changes to this recipe with what you have available in your pantry!
Ingredients
3 ripe bananas
1 ½ cups oats
¼ cup peanut butter – or any nut butter alternatives!
2 tbsp flax seeds or hemp seeds
1 tsp baking soda
1 tsp cinnamon – or more to taste!
¼ cup vegan chocolate chips
Directions
Mix all the ingredients in one medium-sized mixing bowl.
Grease or line a baking sheet.
Roll the dough into small bowls (I like to use a spoon’s worth of dough to make a ball).
Place 1 inch apart on the baking sheet.
Use a spoon to slightly flatten the balls before putting them in the oven (they don’t flatten too much while baking).
Bake for 15-20 minutes at 350 degrees.

I hope you enjoy this cookie recipe!! I have added protein powder to the recipe in the past and not flattened them during baking to get protein power balls as a good post-workout treat!
