Sweet and Sour Tuna

An old, inexpensive recipe with a different taste.

Serves 4.


Ingredients


6 slices canned pineapple, cut into sixths

2 tbsps vinegar

2 tbsps butter

1/3 cup sugar

2/3 cup pineapple juice*

1 chicken bouillon cube

2 large green peppers, cut into 1-inch pieces

2 7-ounce cans tuna

2 tbsps cornstarch

½ tsp salt

2 tsp soy sauce

1/8 tsp pepper

Chinese noodles or rice to serve

*Use the juice from the canned pineapple and add water if short

Directions


  • Sauté pineapple in butter for 5 minutes.

  • Add 1/3 cup of pineapple juice and green pepper.

  • Cover and simmer for 10 minutes.

  • Mix cornstarch with remaining pineapple juice.

  • Add to pineapple with soy sauce, vinegar, sugar and bouillon.

  • Cook, stirring constantly until thick.

  • Add tuna and seasoning, then heat through.

  • Serve over noodles or rice.
