Pollo Guisao / Chicken Stew

All ingredients can be changed according to your taste with certain spices.

You can also add broccoli, cauliflower, mushrooms, Brussel sprouts, you basically can add any veggie you might like.

Ingredients


5- 6 chicken thighs ( thighs are best as they seem to have more flavor) for a healthier portion you can remove the skin, as it does get greasy if kept.

5 medium size potatoes or sweet potatoes , cut in quarters

1 can of chicken broth or 2 cups water

1 small can of tomato sauce

2 packets of Sazon (‘achiote y cilantro’ type is best) for coloring and flavor

2 tbsp of Goya sofrito (some may call it green seasoning)

½ cup of red wine or grape juice (cooks out)

1 medium onion cut about ½ inch in size

1 pepper cut about ½ inch in size

2 cloves of garlic, cut small

2 packets of chicken bouillon


Directions


  • Put chicken, broth or water and wine in a large pot on high heat for about 10 minute. When it starts to boil, add the rest of the ingredients and lower heat to medium for about 20 minutes. Stir once in a while so that all the ingredients cook.

  • While waiting you can prepare white rice or pasta.

  • After 20 minutes, switch the pot with chicken and vegetables to a low heat to simmer, for about 45 minutes. Finally, add your sweet peas and simmer for another 15 minutes.
