Moroccan Chicken

Keanna Chag (MS2)





Ingredients


1 c chopped onions

1 lb cubed chicken breast

2 c cubed sweet potato

2 c cubed zucchini/yellow squash

1 c diced tomato

1 c chopped bell pepper

1 lemon (zest and juice)

½ tsp salt

2 garlic cloves

1 tsp turmeric

1 tsp cinnamon

½ tsp cardamom

1 tsp paprika

Olive or canola oil


Directions


Saute the onions with garlic for a few minutes, and then add sweet potatoes and some of each of the spices and cook until soft.

Transfer to another bowl.

Saute the peppers for a few minutes, then add the squash and add some more of each of the spices. Add tomatoes, lemon zest, and lemon juice, and simmer for a few minutes.

Transfer to bowl with onions and sweet potatoes

Saute the chicken with the rest of the spices, add to the bowl, and mix all together

Serve with cous cous or quinoa
