Beef and Rice Florentine

This is a quick, inexpensive, and healthy recipe my mother has been making for years. My brothers and I loved it as children growing up and now my children enjoy eating it too!

Ingredients


¾ lb ground beef or turkey

1 tbsp olive oil

1 tbsp finely diced onion

1 10oz package frozen chopped spinach

1 cup water

1 medium tomato, diced

1 tsp salt

1 tsp dried oregano

1 ½ cup dry Minute Brown Rice

1 tbsp grated parmesan cheese (or more to taste)

Directions


  • Heat oil in pan and brown ground beef or turkey until cooked.

  • Add onion and sauté 1 to 2 minutes.

  • Push meat to outer sides of pan and add spinach, water, tomato, salt, and oregano. Break up spinach and bring to a boil.

  • Stir in rice until well combined, cover pan with lid, and remove from heat. Let stand 5-7 minutes (until rice is cooked)

  • Sprinkle with cheese and serve.
